Refurbishment of existing restaurant space including demolitions, interior design & fit out. All whilst 4 star hotel property remained operational throughout.

The existing layouts were rationalised, creating a more intimate dining experience while maximising the stunning views of Edinburgh Castle. Operationally, the space was also improved, with staff routes analysed and simplified and kitchen layouts revised.

A new limestone floor leads from the lift lobby to the restaurant reception and the walls are lined with new walnut panelling to conceal storage and cloak space. The new bar and servery can be screened at different times of the day with translucent fabric screens.

The new external decked area enjoys unhindered views of Edinburgh Castle, with lighting designed to ensure the Castle views are the focal point of the restaurant.
