Conversion and extension of existing retail space into new restaurant, bar and lounge. Including demolitions, kitchen, interior design, fit out & furniture design.
Metro Restaurant was formed out of a vacant shop unit on the ground floor of the Apex International Hotel, Edinburgh.
The design sought to exploit the views to the existing green spaces of the
Grassmarket and to the Castle beyond and to maximise daylight into the deep ground floor plan. The interior concept was for a bustling, lively atmosphere, with the scale complementing the adjacent urban environment, ensuring an active street facade.
A simple lighting scheme was developed to keep the large volume uncluttered and the views outwards clear.
All aspects of the design were carefully considered to create a unified environment- from the choice of plates and cutlery to the design of the menu and staff uniforms.
